Sometimes its just has to be all about giving some time back to yourself and indulging in pampering yourself with some good old pancakes and yummy blueberry jam. That's exactly what i did last weekend
Here is how i made the Vegan pancakes
To Prepare the batter , you can take ready made mix or prepare the batter from scratch. Both are super easy :)
1. Take 1 cup of all purpose flour
2. Add 0.5 tea spoon baking soda
3. Add 0.5 teaspoon of sugar (or salt if you like the cakes to be slightly salty)
After the mix is ready simply add coconut milk, mix it well and then get ready to some magic on the pan.
You can oil the pan well and then simply pour the batter on the pan after it is heated well . Keep the cakes on medium high heat for about a minute so that they turn slightly olden brown and then flip the cake to cook them well from the other side.

Blueberry Jam:
2 ingredients is all you need. In a sauce pan add some frozen berries then add sugar to taste and heat it in the sauce pan till the sugar and berries melt and mix well. Ensure that the heat is on medium low and stir continuously while the pan is on the flame. Remove the pan from heat and get ready to drizzle some blueberry love on the pancakes and your breakfast is ready to be served.
