Chocolaty Banana Bread

Do you have over -ripe banana lying around and you don't really know what to do with it. Most of us simply throw it away but instead of throwing what if you use that in making absolutely delicious banana bread. Wouldn't that be an amazing deal :) . So that is exactly what i did and here is the gorgeous result after an hour of baking.

So now if you are motivated to make this bread, here is my recipe to prepare it
Preheat the oven at 350 F while we prepare the batter for banana bread
1. Take 2-3 over-ripe bananas in a mixing bowl and mash them well with a fork till their consistency is almost semi -liquid
2. Add half cup of sugar and half cup of coconut oil in this mush
3. Add a few drops of vanilla essence and 2 teaspoon of chia seed or flax seed
4. Mix this well till it it is well combined
5. Now add the dry ingredients which is about 1 cup of whole wheat flour, 1 teaspoon baking soda, 0.5 teaspoon of baking powder and 1 teaspoon choco -powder for the color
6.Mix this well till it is well combined.
7. Add this stage add 0.5 cups of dry coconut shreds and gently fold in the mix
From here you know the drill, grease the baking pan or line the try with parchment paper and pour this mix on the pan. Put this in the oven and bake for 45 mins at 350 F. Then take out the bread and cover this with tin foil to avoid over-cooking on the surface of the bread and put it back in the oven for baking at 350 for another 20 mins. At this point the bread should be ready. Take out the pan from the oven and let it cool .

Garnishing before we are ready to serve
Before you are ready to serve it consider making this bread even more appetizing by doing one of the following
1. Sprinkle some dry coconut flakes on the bread . The coconut and banana flavours complement each other very well
2. Drizzle chocolate syrup on the bread and cut up some fruits (strawberry etc) and serve this with the bread.
I went with the first one and results did totally amaze me.
