Cool it off with vegan Pistachio Ice-Cream this summer ...

Ever since i was a kid my fondest memories are associated with Pista icecream . I still vividly remember the first time my grandma introduced my to this flavor of ice-cream and i instantly fell in love with it. I have to admit this ice-cream makes me so nostalgic and I found that this flavor was not as popular . This is the only flavor of ice-cream that really made me want to cheat on my vegan diet :). I decided to give it a trial at home.
Here is my recipe for my first attempt at preparing pista ice-cream without an ice-cream maker at home
1. Soak about 2-3 handfuls of pistachios in lukewarm water for 15-20 minutes
2. Grind the soaked pistachios in a fine paste
3. In a sauce pan add about 400 ml-500 ml of almond milk and 0.5 cup of sugar and add the pistachio paste in the pan
4. Bring the mix to boil and add about half teaspoon of cardamom and a few strands of saffron while stirring continuously on medium heat
5. Once the mix is reduced to about half the volume then add about 1 teaspoon of cornflour in cold water and mix it well in the ice-cream mix and after 2 mins once the mix starts to thicken remove it from heat.
6. Cool this completely by keeping it aside for atleast 30 mins
7. Add 1 cup of coconut cream to this mix and whip it well in the mix
8. Put this mix in molds and it is ready to go in freezer for a couple of hours (3-4 hours).
9. After the ice-cream is semi solid, blitz this in mixer a couple of times and set it back in the freezer.
10. Set aside in freezer for a couple of hours.
Before you are ready to serve, grate 2-3 pistachios on the ice cream and it is ready to be enjoyed. Om nom nom nom ;)
