Coconut Tapioca Pudding Recipe

Since i fell in love with vegan lifestyle, I have learned to have some fun in kitchen and enjoy some desserts that are not just rich and creamy but also completely vegan. So today i would like to share my fun version of vegan tapioca pudding.
Preparation
1. Soak about 100 g of tapioca pearls overnight
2. When ready to prepare, drain out excess water from the pearls
3. In a sauce pan, add coconut milk and tapioca pearls on medium heat and simmer for about 15 -20 mins
4. Add a couple of strands of saffrons for a vibrant yellow color, in the pan while the pudding is still getting simmered
5. Add coconut cream and if available almond carnation milk to add the rich and creamy texture to your pudding
6. Add sugar to taste or you can add white chocolate (Vegan white chocolate if you are like me :D ) and then keep on stirring on low flame for about 10 more minutes till the chocolate dissolves and tapioca pearls also turn translucent.
7. Add some green cardamom powder towards the end and remove from heat.
8. If you want your pudding to have a fruity flavor, add about 5 drops of pineapple or mango essence.

And Voila you pudding is ready to be served and enjoyed warm or chilled.
Serving
If you are someone who enjoys your food to look gorgeous before you are ready to dig in then by all means try out some of ideas to enjoy this dessert
1. Cut up some mangoes and add a few pieces on top of each bowl
2. Puree the mango and put some puree on the base of serving bowl and then add pudding and then add some more puree and finally top it off with a mint leaf
3. Add a few cut up pineapple on the bottom , a layer of pudding and then top it off with some vegan ice-cream.
