Gujraati Tomato flavored Khaandvi Rolls...

Khandavi needs no introduction. It is such a famous recipes from the Gujraat India that it if safe to say it can rule all our hearts alike. Being a khaandvi lover myself , I often prepare this recipe and share it with friends. I decided to experiment with making a tomato flavored khaandvi and I have to say my experiment had such promising results that i just had to share it you guys. It is pretty simple to make as well so do give this recipe a try.


Preparation:

  1. Take 1/2 cup of besan or chickpea flour and add 1cup of unsweetened fresh almond milk and 1 teaspoon of vinegar in a blender

  2. Add 1/2 teaspoon turmeric and 2-3 teaspoon tomato paste, 1 glove of garlic and some grated ginger, a pinch or black pepper and salt to taste in this blender and blend well

  3. In a sauce pan on low flame , pour this mixture and keep stirring it till we see the mixture becomes think in it's consistency and in not runny any more

  4. On back side of a clean steel dish apply light oil based greasing, spread this pasty mixture in a thin layer quickly while this paste cool off and set aside to let it cool down completely for 15-20 mins. In the mean time prepare the tampering

Tampering:

  1. In a sauce pan add some oil and heat it

  2. Add mustard seeds and let it crack

  3. Add red chillies and grated coconut. and turn off the heat .

Once the khaandvi is cooled down, (optionally) apply a thin layer of some dip or sauce if you like. make think column like incisions and gently roll up each of the columns to get beautiful khaandvi rolls. Pour the tampering that we prepared.


Garnish:

Stack up these rolls in a tray and sprinkle some green coriander leaves and fresh grated coconut and some roasted sesame seeds. Enjoy with coriander mint dip and impress your friends and family.
