Mediterranean Flavors with Couscous Salad

In my opinion that plate looks something i would like to enjoy in a fancy restaurant , but it is super simple to put together and can so easily be enjoyed in the comforts of your own home, even if you are preparing dinner for your special someone. This entire bowl should take close to 20 minutes to put together. And it is super healthy and light to be enjoyed guilt free :)
Preparation:
Couscous Salad
1. Take about 1 cup of water in a pot and heat it till it's lukewarm
2. Add about a quarter cup of couscous to this pot and cover and let the couscous heat for 10 -15 mins till the grains is well cooked
3. Drain out the excess water and immediately rinse with cold water
4. Finely chop some red onions, cherry tomatoes, cilantro , cucumber and grate half a carrot
5. Optionally you can add finely chopped lettuce or spinach to this salad mix
6. In a mixing bowl add the chopped veggies and the couscous
7. Add a drizzle of olive oil , juice of 1 lemon, pink salt , black pepper
8. Gently mix this well so allow the mix to be gently coated with the simple dressing and we are all set to enjoy this hearty and wholesome salad
Roasted Aubergine
9. To prepare the roasted Aubergine, thinly slice the aubergines
10. In a separate bowl , mix 2 teaspoon of olive oil, balsamic vinegar, salt and soy sauce.
11. Lightly coat the slice and add on the skillet to roast these aubergines for 2-3 minutes each side till they are nicely toasted
Roasted Brussel Sprouts
12. Slice up about 20- 25 Brussel sprouts and in a mixing bowl lightly coat them with olive oil and salt
13. In the oven roast these Brussel sprouts for 10 minutes till the outer surface is lightly toasted and the sprouts are crispy
Pita Bread
14. In a pan lightly toast some Pita bread and cut it each bread into 4 pieces
Garnishing:
To enjoy this meal while also making it aesthetically pleasing , here is my recommendation. Serve the couscous salad in the center , then add roasted aubergines and Brussel sprouts on the side and arrange the Pita bread on the side. I simply can't wait to enjoy this meal. Happy cooking :)
