Thai Green Curry... Tropical Classics

Coconut based green curry is one of the Thai classics and is so popular across the world for a reason. It's aromatic, refreshing, creamy and obviously delicious. This dish reminds you of tropics and tasting it feels like summer in your mouth. So if you would like to learn a little more about this amazing dish, take on this journey with me :)
Preparation:
1. In a pot, add fresh coconut milk and simmer on low flame, till the milk starts releasing oil from side. At this stage, start stirring the pot to avoid the milk from sticking to the bottom of the pan
2. Once the oil gets released , add 2-3 kafir lime leaves to get the fresh aroma and tropical flavor.
3. Next add some fresh crushed lemon grass to the milk and stir for a minute. Typically if available to you can also add bamboo shoots
4. Next add 4-5 teaspoons of green curry paste and fry this for a minute or two. I used a store bought one which you can easily find in your nearest asian market
5. Add this stage , we can add our fresh vegetables like fresh broccoli, zucchini, mushrooms, carrots and coat the veggies well in this paste. I like to add fresh pineapple as well to give the curry some sweet and tart flavors.
6. Now add a can of fresh coconut cream (along with the milk)
7. Stir it well and add about 1 teaspoon of salt and half a teaspoon of sugar
8. The add fresh basil leaves and cubes of fresh tofu and cover up the pot with a lid and simmer for about 5-7 minutes on low flame, to allow the tofu to soak the flavors
9. After this step the curry is ready to enjoyed , so turn off the heat and let the curry stand for about a few minutes to let the flavors infuse
Garnish:
To enjoy this delicious curry serve it up on a bed of rice and garnish it plenty with fresh jalapeños, basil , lime slice and enjoy while it is still steaming :)
