The Beetroot Paratha

Sometimes even with the best of intentions to eat healthy , there are few veggies that you just can't get yourself to eat, at least I can't for sure. One such vegetable is beetroot. To sneak in an extra serving of veggies , i found that mixing it in with my roti /paratha helps to enjoy both beetroot and roti / paratha. Enjoy this fun paratha while it lasts
Preparation:
1. Simply wash and peel a small beetroot and grate it well
2. In a mixing bowl , add about 1 cup of whole wheat flour, and add in the grated beetroot
3. Add some salt to taste and about 1-2 teaspoon oil
4. Knead everything well to make a soft dough. If the dough is too dry , add about 1-2 teaspoon water
5. Make small bowls from the dough, and roll it in circular motion to make paratha
6. On a medium low flame cook this pink paratha
Enjoy it mint chutney and cucumbers
