The Perfect Snacks / Appetizers.... Suji Dhokla

This is one of my all time favorite snack and it is so easy to put together . It is amazing how a simple recipe could be both super delicious and so quick to prepare. It can be prepared in advance and enjoyed in outings or picnics. This is one of my go to comfort food and I just can't get enough of it. Many times it is my quick breakfast for the rushed mornings. Just follow simple steps below and enjoy a yummy dhokla
Preparation:
1. Take 1 cup finely ground semolina or suji and place in a mixing bowl
2. Add 1.5 cups of coconut milk or you can add 0.5 cup water and 1 cup of coconut milk and mix well. Leave aside for 10 -15 mins to allow the suji to soak the liquids
3. In the meantime preheat the oven to about 350 F
4. One the batter has been standing for a while and it becomes more consistent , add salt to taste and if you like to add any other flavor enhances , feel free to add any masala to the batter. At this point you can even add a few finely chopped veggie but that is optional.
5. Grease the baking pan and prepare it for the batter
6. The final step is to add 1 teaspoon of Eno / or any other fruit salt and mix quickly without letting the air bubbles escape, pour the batter in the baking pan and put it in the oven for 20-25 minutes to bake. The dhokla is ready one the tooth pick comes out clean
Garnish:
To garnish this dish and enhance the flavors of dhokla, prepare some tempering. This can be done easily by heating 2 teaspoons of oil in the pan and adding mustard seeds once the oil is hot enough to allow the mustard seeds to splutter. Then add asafoetida Add green chili and green curry leaves. Add 0.5 teaspoon of sugar and 0.5 teaspoon salt and 3-5 teaspoons of water in the pan. Pour this tempering on the dhokla and enjoy with any dip or chutney.
