Creamy Vegan Greek Tzatziki

Tzatziki is a creamy yogurt based dip that can be enjoyed with Pita bread or chips. I tried to make a vegan version of this delicacy and the effort to do it myself was totally rewarding. It's a pretty simple recipe and really easy to make.
Tzatziki
1. In a cheesecloth, take 1 cup of any plant based yogurt and wrap it and place it over a strainer in a bowl and set aside for at least 4-6 hours so that all the excess water is drained out
2. Grate 1 cucumber (with or without the skin) and strain out all the excess water from the grated cucumber. Do not throw away the cucumber water it can always be reused for something else
3. In a bowl add the hung yogurt and grated cucumber and mix them well together.
4. Add 1 clove of minced garlic for some flavor
5. Add juice of half a lemon or you can add vinegar if lemon is not available
6. Add a teaspoon of salt, a pinch of black pepper and season it with some fresh or dried herbs like dill, thyme or mint and store it in the fridge for 2 hours.
Garnish and Serve:
1. Stack up about 7-10 mint leaves and roll them up and then slice the roll to get beautiful strands of mint leaves.
2. Serve the tzatziki in a small bowl and add the mint leaves on top of it. Add asliced olive for some extra garnish
3. Optionally you can add a dash of olive oil and enjoy this with toasted bread or chips or even some fresh seasonal veggies.
