Quinoa Veggie Pulav

Quinoa a very popular source of protein among the vegan athletes and body builders and this grain provides wholesome nutrition while it is also gluten free. Quinoa seeds is a South American grain and while there a variety of ways to cook it, I tried to add some Indian flavors and serve it a lot of veggies to make it not only colorful but also a really healthy lunch. Its an easy way to sneak in more vegetables in your food without making any extra effort.


This amazing recipe is really quite simple and easy to prepare. Just follow along with me :)

1. Take 1 small cup of quinoa grains

2. Put a dry pan on medium heat and dry roast the grain in it for about 3-5 minutes, stirring occasionally

3. Add 1 teaspoon of salt and 3 cups of water in the pan and cover the lid and let it cook for at least 15 minutes on low heat. The idea is let the grain soak in the water and become soft and palatable.

4. In the mean time cut up a lot of veggies in small bite sized chunks. Green onions , carrot , bell peppers, red onions, celery, radish or whatever veggies you have left over in your fridge

5. Once the quinoa is done the base of this recipe is ready.

6. In a separate pan, heat up about 2 teaspoon of coconut oil and add mustard seeds once the oil is hot enough to splatter the seeds

7. Add a pinch of asafetida and 2 well minced green chillies

8. Add all the cut of veggies and slightly sauté them for around for 2 minutes and cover for about 2 more minutes so the veggies are soften

9. Now add a pinch of turmeric and red chilli powder(optional)

10. Add the cooked quinoa and stir it around till it is well covered with turmeric and has the beautiful golden color

11. Serve it fresh with some lemon slices and enjoy it fresh
