Refreshing Rainbow Rolls ...

These rainbow rolls never get old and they are super simple to put together. Let's just say who doesn't need some more colors in life. With an amazing peanut dipping sauce, you just can't ask for anything more.


Peanut Dipping Sauce

All the ingredients needed to prepare this delicious sauce

1. Peanut Butter 2-3 tablespoons

2. Soy Sauce 2 teaspoons

3. Ginger 1/2 teaspoon shreds

4. Garlic 1 clove minced

5. Salt - 0.5 teaspoon

6. Vinegar - 1 teaspoon

7. Sugar - 1 teaspoon

8. Oil - 1 teaspoon

9. Water - 2-3 teaspoons

10. Toasted sesame seeds for garnish


1. In a blender add the peanut butter, ginger , garlic, soy sauce, vinegar, salt and sugar and blend it well till it is well combined.

2. In a pan add 2 teaspoon of oil and heat it for a 2 minute and add all the content of the blender and stir continuously over medium heat for about 2 minutes

3. Once the sauce starts to thicken up , remove it from the heat and take it out in a bowl and garnish it with the sesame seeds.


You can have this sauce all on it's own or even with the raw veggie that we cur up for the rolls, but i will suggest holding you horses till the beautiful summer rolls are ready and enjoying this creamy sauce with the rolls.


The rolls doesn't really as much preparation either. Here are all the veggies we need and they should be sliced really finely so that they do not tear off the wrapping rice paper. All we need is

1. Cabbage

2. Carrots

3. Bell Pepper

4. Coriander leaves

5. Cucumber or avocado to add the green flair

6. Some sweet potato glass noodles


Rainbow Rolls:


1. Take lukewarm water in a shallow dish, and dip the rice paper for 5 secs.

2. Once the rice paper is wet , place the noodles and a few veggie slices about a few centimeters from one end of the paper.

3. Fold the wrapper from the end as well as the sides and then roll it back up to the farther end of the rice paper.

4. Repeat for all the other rolls


Cut the rolls from the middle and serve fresh with the dipping sauce.


How can you not fall in love with these gorgeous colors ;)
