Sizzling Veggie Noodles ...

Hakka noodles / Vegetable Chow-mein / veggie noodles are many names for the same dish and this dish is easily one of the most popular Indo-chinese dish in Indian homes, fusion restaurants , marriage ceremonies and other social events. Another amazing thing about it is that recipe it is super quick and easy to prepare and can prepared really quickly and savored for lunch or dinner equally well.
So well I guess you are sold on this by now to give it a shot at preparing it yourself and here are a couple of simple steps to do this.
1. Boil some water at 1 teaspoon of salt and a few drops of oil in it
2. Once the water is boiling well put in the noodles and cook according to the packet instructions till the noodles are soft.
3. Once done simply strain away the excess water and keep the noodles aside.
Preparation
So this dish requires some preparation before we hit on the heat. We need 1 medium sized onion well diced and 4 cloves of garlic well mined and a small cube of ginger minced. Additionally a small cabbage or half medium sized cabbage well chopped and 3-4 carrot julienne , half bell pepper diced into small cubes and 4 -5 spring onions .
For sauce preparation , we need just 3 teaspoons of soy sauce, 1 tea spoon vinegar, 1 teaspoon green or red chilli sauce, 1 teaspoon ketchup, and 1 teaspoon of water and salt and black pepper in a small bowl and mix it all well together.
Ready to prepare the dish
Now all that is needed is to assemble all the colorful ingredients that we have together to get one gorgeous looking plate of appetizing noodles.
1. In a pan add 3 teaspoon oil and heat it well.
2. Add diced onion and saute well till the onions turn slightly translucent. Then add ginger and garlic and saute it for a minute on high flame.
3. Next add carrots and reduce heat and cover the pan. Let the carrot soften a bit in the pan.
4. Once the carrot soften, remove the cover and turn up the flame. Add the cabbage and saute it for a minute.
5. Then goes in the bell pepper and saute for 30 seconds
6. Add the noodles at this point and mix it with the veggies .
7. Then add the sauce and a teaspoon of water if the sauce are too dense to smoothly coat the vegetables and the noodles.
8. Turn off the heat after a minute or two
9. Remove from heat and sprinkle the spring onions on the noodles and there you have it.
To garnish, we can serve the noodles as is or i like to sprinkle some sesame seeds and a few roasted peanuts along with the noodles. But that is simply add-on. So are you ready to dig it? . I hope you enjoy this recipe as much as I do.
